SUGAR-FREE BERRY JAM WITH SORBITOL
Love the natural taste of berries but want to avoid sugar? Try this simple recipe for a thick, homemade berry jam. Thanks to sorbitol and apple pectin, the jam has a rich berry flavor, pleasant texture, and excellent consistency without added sugar.
Ingredients:
Berries (fresh or frozen) – 2.33 kg
Sorbitol – 900 g
Apple pectin – 40 g
Lemon or lime juice – 1–2 teaspoons
Instructions:
Prepare the dry ingredients.
In a separate bowl, thoroughly mix the apple pectin with the sorbitol. This helps the pectin distribute evenly throughout the berry mixture and prevents clumping.Heat the berries.
Place the berries in a large saucepan with a thick bottom. Heat gently over medium heat, stirring occasionally, until they reach approximately 40–45°C. If using frozen berries, allow them to thaw completely while heating.Add the sorbitol and pectin mixture.
Gradually add the sorbitol-pectin blend to the warm berries while stirring continuously. Mix well to achieve a smooth and uniform consistency.Bring to a boil.
Continue stirring and bring the mixture to a full boil. Once boiling, cook for 1–2 minutes. Longer cooking is unnecessary, as the pectin will continue to set during cooling.Add the citrus juice.
At the end of cooking, add the lemon or lime juice. This enhances the berry flavor, adds freshness, and helps the pectin achieve the perfect gel texture.Fill the jars.
Immediately pour the hot jam into clean, sterilized jars and seal tightly. Turn the jars upside down and leave them to cool completely.
As the jam cools, it will become thicker and develop its final texture.
