HOW TO STORE ISOMALT CREATIONS
Finished isomalt decorations should be stored in an airtight container at room temperature, away from direct sunlight.
Do not store them in the refrigerator or freezer, as condensation will damage the isomalt.
SAFETY WARNING
Isomalt becomes extremely hot, so handle it with care.
It is recommended to wear gloves, long sleeves, and closed-toe shoes while working with isomalt to avoid burns.
HOW TO PREPARE ISOMALT
Pour at least 450 g of isomalt crystals into a saucepan and heat over low to medium heat.
When the crystals begin to melt, gently tilt the saucepan and move it in a circular motion several times.
Return the saucepan to high heat. When the isomalt begins to boil, do not stir. Insert a candy thermometer and cook until the temperature reaches 332°F (≈167°C).
Remove from heat and place the bottom of the saucepan into cold water to stop the cooking process.
Add the desired color or flavor. Reheat if necessary.
CAN ISOMALT BURN?
Isomalt can withstand high heat, but it may burn if significantly overheated. Cook it only until it reaches 167°C (332°F) and remove it from the heat immediately.
If you need to reheat hardened isomalt, do so in the microwave in short intervals of 15–30 seconds.
HOW TO PREVENT AIR BUBBLES IN ISOMALT
After heating, allow the isomalt to sit for 45–60 seconds so that air bubbles can dissipate.
If bubbles appear after pouring, use a needle or thin tool to push them toward the edge while the isomalt is still hot.
HOW TO MAKE ISOMALT CLEAR AND SHINY
Once the isomalt has completely cooled, lightly pass a culinary blowtorch flame over the surface. This removes cloudiness and air bubbles.
You can also spray the cooled isomalt with a clear edible glaze spray, which protects it from humidity, keeps it glossy and transparent, and prevents stickiness.
HOW LONG DOES IT TAKE TO SET?
Depending on the size and thickness of your isomalt creation, it usually takes 5–20 minutes to harden completely.
CAN ISOMALT BE REHEATED?
Yes. Isomalt can be reheated in the microwave in 15–30 second intervals.
